Tropical fruit cake

 Welcome to our First Cookery Corner for 2022.
 Enjoy making this delicious Tropical Fruit Cake and enjoy eating it even more.

 Tropical fruit cake
 Ingredients 
 (For the cake)
 3 eggs
 200g sugar
 200g butter
 200g cake flour
 1 tablespoon vanilla extract
 3 small sour plantains 
 1.5 tea cup chocolate chips or cooking chocolate chunks
 (For the pineapple base)
 4-5 rings of pineapple
 1 tablespoon sugar
 1 teaspoon powdered cinnamon
 Glazed cherries (optional)
 Method
 For the pineapple base
 Step 1. Take the hard centre out and carefully saute the pineapple rings with the sugar and cinnamon for 3 minutes 
 Step 2. Leave to cool.
 For the cake
 Step 1. Light the oven so that it is hot when your cake batter goes in
 Step 2. Using the cake setting in your food processor, beat the eggs and sugar.
 Step 3. Add the butter and keep beating
 Step 4. Add the vanilla and roughly chopped plantains and keep beating
 Step 5. Fold in the cake flour and then add the
 chocolate chips
 Step 6. Grease a small (9-inch) baking tray
 Step 7. Arrange the sauteed pineapple at the bottom of the tray, place a glazed cherry at the centre of each ring and pour the cake batter over it. 
 Step 8. Pop it into the oven and bake for 30 minutes or until the cake is golden on top and coming off the edges of the pan.
 Step 9. Let the cake cool and then flip it onto a tray or plate!

Halapa

We also bring you a traditional recipe – that of Halapa.

Ingredients

!/2 measure slightly roasted rice flour

½ lb jaggery (scraped)

1 lb scraped coconut

Salt

Method

Put all the ingredients together in a basin and mix well together by hand. Place a dessertspoonful of the mixture on a kenda leaf, flatten it out and fold the leaf in two. Then steam the halapas.

How to steam

Tie a pudding or any other suitable cloth over the mouth of a fairly open chatty pot three-quarters full of water. Cover it with a chatty big enough to cover the rim of the pot and bring the water to the boil.Then place the halapas , a few at a time on the improvised steamer and steam for 15 to 20 minutes or until sufficiently boiled.As the water in the steaming pot boils down more boiling water must be added. Sauce Marshmellow

Ingredients

4 ozs marshmellows

1 gill water

6 ozs sieved icing sugar (approx) 2 egg whites

Method

Cut the marshmellows into small pieces, put into a double saucepan, the inner one should be of china. If this is not available, a pudding basin can be placed over a pan of boiling water, the basin wide enough to rest firmly on the edge with the bottom resting firmly in the water.

Allow to melt, then add the icing sugar and stir until smooth. Remove the inner pan and beat thoroughly until quite smooth and cool. Fold in the stiffly-whisked whites of eggs, and whisk all together until thick.

The quantity of sugar depends on the size of the eggs.

If the sauce is more liquid add more sieved sugar. Add flavouring of choice. Source: Daily News Cookery Book
