Just like chocolate but good for you
Ingredients
1 cup of pitted dates (soft ones are best)
2 tablespoons peanut butter (creamy or crunchy)
1 tablespoon unsweetened cocoa powder or melted dark chocolate
¼ cup shredded coconut (plus extra for rolling)
A pinch of salt.
Let’s make them
If your dates are soft, you can mash them with a fork or your hands in a bowl. If they’re a bit dry, soak them in hot water for 10 minutes, then drain and mash—or use a blender with the help of your mother for extra smoothness.
Scoop in the peanut butter and stir, squish, or mix until it’s all blended with the dates.
Add the cocoa powder (or melted chocolate) and salt. Mix it all up until it looks like chocolate dough.
Add ¼ cup of shredded coconut into the mix and stir well.
Take a little bit of the dough and roll it between your hands into a ball—as big or small as you want.
Roll each ball in some extra shredded coconut to make them look snowy and sweet!
You can eat them right away but best eaten after keeping them in the fridge for 20–30 minutes to firm up.
