Ingredients
500 grams of whole wheat flour
3 large overripe bananas (the peel should be partly brown or spotty)
100 ml thick coconut milk
100 ml coconut oil
180 grams of brown sugar
150 grams of chopped nuts like cashews or almonds
100 grams of chocolate chips or chop up your dad’s favourite chocolate bar
1 teaspoon of baking powder
Half teaspoon of baking soda
1 teaspoon of vanilla
1 teaspoon of cinnamon powder
1–2 tablespoons of lemon juice or vinegar
Let’s make them
Ask your mom to preheat the oven to 250 degrees Celsius.
Take a bowl and finely mash your bananas with a fork.
To the mashed banana mix add the coconut milk, coconut oil, sugar, cinnamon, salt, lemon juice or vinegar and vanilla and combine it well.
In another bowl combine the flour, baking powder and baking soda and mix it well. Gently add the wet ingredients to the flour mixture and fold the mixture in. Don’t over mix!
If it’s a too dry add a bit of milk or water to loosen the batter. Once it’s a sticky paste, add the chocolate chips and the nuts and mix it gently.
Prepare a loaf pan or a cake tin and grease it well with coconut oil.
Pour the mixture into the pan and bake in the oven for 45 minutes.
The cake will be done when a toothpick comes out clean.
Let it cool before cutting and enjoy a warm slice with your father for breakfast or tea.
A delicious tip – spread some peanut butter or Nutella for even more yumminess!
