Ingredients
500 grams of fresh pumpkin
250 ml of thick coconut milk
3 large eggs
200 grams of good quality kithul jaggery
3 to 4 cardamom pods
3 to 4 cloves crushed
1 teaspoon of cinnamon powder
A pinch of salt
Preheat the oven to 250C
Let’s make them
With an adult’s help cut the pumpkin into pieces and boil them until they are fork tender, drain the pumpkin and set it aside to let it cool.
Grate the jaggery carefully or get an adult to help you.
Take out the blender and add all the ingredients to the blender and blend untill thick and foamy.
Pour the mixture into an oven proof dish and bake for 50 -45 minutes until the top is golden and caramel like.
Let it cool and enjoy.
