Ingredients
I pack of oyster mushrooms
1 large onion diced
3 to 4 green chillies chopped;
if you prefer it to be less
spicy leave it out
1 large egg
50 grams of wheat or rice flour
A teaspoon of baking powder
A pinch of turmeric
Salt and pepper to taste
Coconut oil to fry
Let’s make them
Take a large bowl, and add the flour, water, turmeric, baking powder, salt and pepper to make a smooth batter. Crack in the egg and stir well, to form a smooth batter. It can get a bit lumpy that’s OK. If, it gets too thick add some water and leave it aside.
Wash the mushrooms and roughly tear them into pieces with your hands.
Add the shredded mushrooms, diced onion and the green chillies into the batter and mix them well, and let it rest for a few minutes. In the meantime, with the help of your mother or an adult, take a large frying pan and fill it with coconut oil and leave it under the heat till light bubbles form. Get your mother or an adult to carefully spoon out the mushroom batter and pour it into the hot oil, one by one.
Let it fry for a few minutes on both sides until golden brown.
Carefully take out the fritters from the frying pan and let them cool in paper serviettes for few minutes, because they will be hot.
Enjoy them warm and crispy with your favourite sauce.
